OT- Family Project! Food Storage!

In the wake of all the natural disasters we have had in the last 5 years, it is my desire to create a real food storage in the next place we live.  (The garage will not be a garage!)  I want to create a food storage area with a place for a 72 hour kit for everyone.

This project will not be part of the normal food budget for my family, but it will take time for it to all be put together.  I am thinking that we can start with the kits.  The kids are going to save their old school backpacks and use those as starter packs.  Waide and I can get largers packs because there will be more stuff we will have to carry in them.

As I have been doing research on 72-hour kits, I am noticing a TON of sugar products.  Instant oatmeals, hot chocolate, cold cereal packs, etc.  I am thinking that people are going to need things that will carry them through the day with energy and protein.  Some of the positive things I have found- beef jerky, trail mixes (no M&M's), fruit cups in natural juices, protein bars, granola bars, and some hard candies.   The trick here will be to watch the sugar in the protein and granola bars.  The hard candies...you need a lifesaver once in awhile!

Even in these kits, we have to make sure that we are getting complex carbs, protein, and nutrients.  So, now I am looking into recipes that will appease the picky eaters, but when you have in crisis  that isn't the time to think of your options.

As for food storage, I am planning on starting that this late spring and into the fall because I will be shopping the farmers markets.  My mom and I are going to start out by canning pickles!  Then we will get into the tomato products (sauce, paste, marinara,etc.)  I would also like to start to dehydrate some fruit and make turkey and beef jerky.

So, now I am researching some new things and hopefully I can integrate some of my ideas into my HUGE project that I am currently working on.
